Cabernet Franc - 2016

A study in contrasts, bright and dark, savory and sweet, big black cherry fruit with balanced acidity up front and an undercurrent of french tarragon, oolong tea, and granite. 

Suggested pairing: Mighty Baby - s/t (1969)

The grapes were from a now defunct vineyard on the Northeast shore of Seneca Lake. We crushed and destemmed, adding 20ppm of SO2, and allowed a native ferment to go for 5 weeks, with punchdowns 2x a day for the first two weeks, and then 1x a day thereafter. It was pressed directly to a combination of glass demijohns and neutral French oak barrels and sat (without temperature control) on the gross lees with no racking and no additions for 12 months before being racked to blend and bottled, again with no additions. 

Only 20 cases of this wine were produced. Direct orders are now closed. We'll make an announcement (and update below) when the wines are available at restaurants and retail. Thanks for the support!
